Quinoa Chili, Vegetable and quinoa soup, Oven Roasted Sweet Potatoes, Vegan Mango Lassi [Ralph Matta]

Quinoa Chili

Ingredients (8 servings)

1 cup uncooked quinoa
2 cups of water
4 green onions chopped
1 jalapeño pepper seeded and minced
1 tablespoon group cumin
40 ounces of cooked black beans 
1 red bell pepper chopped
1 green bell pepper chopped
3 tomatoes cubed
1 cup of corn kernels
1 zucchini chopped
1 tablespoon olive oil
1 teaspoon dried parsley
1 tablespoon chilli powder
1 teaspoon dried oregano leaves
1/4 cup chopped fresh cilantro
Salt and black pepper to taste

Bring quinoa and water to a boil in saucepan over high heat. Reduce heat and let simmer until quinoa is tender
Heat olive oil in a large pot over medium heat.
Stir in the green onion and jalapeño pepper, cook for about 5 minutes
Season with chilli powder and cumin
Stir in tomatoes, black beans, bell peppers zucchini and spices
Simmer until peppers are tender
Stir in quinoa and corn kernels and simmer for 5 minutes
Stir in the cilantro and serve

Vegetable and quinoa soup

Ingredients (6 servings)

2 tablespoons olive oil
1 tablespoons butter (optional)
2 green onions chopped (optional)
1/2 cup diced carrot
1/2 cup chopped celery
2 tablespoons dried parsley
1 teaspoon dried basil
1 bay leaf
1 pinch dried thyme
4 cups of vegetable broth 
2 cups shredded cabbage
1/2 cup quinoa
1/2 cup grated parmesan (optional)

Heat olive oil in a large pot
Cook and stir in green onions, carrot and celery until softened
Add spices, herbs, vegetable broth and tomatoes
Brig to a boil then simmer for 10 minutes
Stir in cabbage and quinoa
Cover and simmer until quinoa is tender
Garnish servings with parmesan cheese

Oven Roasted Sweet Potatoes

Ingredients (4 servings)

4 large sweet potatoes peeled and sliced
1/2 or 1 cup of olive oil
4 teaspoons of a mix of dry herbs (basil, Thym, Oergano, parsley, dill)
1/2 teaspoon salt

Preheat oven to 475 deg C
Combine all ingredients and mix well then place in a single layer pan or baking sheet
Roast for 30 minutes or more turing occasionally until brown on all sides

Vegan Mango Lassi

Ingredients for 4 cups

2 cup of ripe mangoes 
1 cup of soaked cashew nuts (3 hours)
1 cup of almond milk
1 cup water (more or less based on desired consistency)
6 pitted dates

Place all ingredients in blender and blend at high speed for 30 seconds or until desired consistency.
