Crazy Chocolate Cake, Raw Vegan mayonnaise, Raw zucchini hummus, Raw Tarrator [Milen and Vera]

Crazy vegan chocolate cake


2 2/3 cups flour (gluten-free would make it even healthier)
1 cup brown cane sugar
5 Tbsp. cacao powder (feel free to substitute with carob powder)
2 tsp. baking soda
1 ч.л. salt
1/2 cup grape or coconut oil
2 tsp. vanilla powder (preferably natural with no additives)
2 Tbsp. apple cider vinegar
2 Tbsp filtered water


Mix all the dry ingredients in the pan that you plan to bake your cake and mix them well.
Pour all the rest of the ingredients and using a fork mix all the ingredients until a semi-liquid dough is formed.
Bake in a preheated oven to 205C (400F) for 40 minutes.
Leave it to cool for 10-15 minutes and serve.

Raw creamy soy-less mayonnaise


1 1/2 cups of soaked cashews
1 cup of grape or avocado oil
1 large lemon or 2 limes (juiced)
1 tsp. Himalayan/Celtic or any other sea salt
1/2 cup of filtered water
1 tbsp sunflower lecithin (if available)
flavors and spices at your wish and desire


1. Mix in a high speed blender the cashes and water and blend until a thick and creamy mixture.
2. Add the oil and lecithin and keep on blending for another minute or so.
3. Add the salt and lemon juice and blend until a firm, creamy and fluffy consistency is achieved (2-3 minutes)
4. Now is the perfect time to add your spices and herbs after what to leave the prepared dose to chill a bit in a fridge.

P.S. Please do not forget that even the healthiest meal in quantities larger than the body can digest can bring the satisfaction and feelings down. Use the mayonnaise as a perfect addition to sauces, or simply as a "best friend" to your raw or steamed vegetables.

Raw zucchini hummus


5 cups zucchini cut in pieces (we would not peal the organic ones)
1/2 cup raw tahini (sesame butter)
4 cloves of garlic
1/2 cup lemon/lime juice
1 tsp. cumin (could be increased if you like the flavor)
a pinch of kayen pepper or chili (if hot is not a problem)
1 tsp. Himalayan/Celtic or any other sea salt


1. Mix all the ingredients in a blender or food processor and blend until a thick and homogenized puree is formed.
2. Leave the hummus to cool in refrigerator for 10-15 minutes and serve garnished with some fresh spices (parsley, basil, dill etc.)

Raw Tarator soup


1 1/2 cups soaked almonds
1-2 large cucumbers chopped in cubes or pieces
1 1/2 litters filtered water (5-6 cups)
a pinch of Himalayan or any other sea salt
3 cloves garlic (1 tsp. garlic powder)
1/2 bunch of dill and/or parsley (1/2 cup chopped)
1/4 cup coarsely chopped walnuts or pecans
2-3 Tbsp olive oil


1. Prepare almond milk by blending in a high speed blender the almonds and half of the water.
2. Add the salt and garlic and blend for another 30-40 seconds.
3. Add the cucumbers, walnuts and greens to the mixture and start chopping them (DO NOT BLEND FINELY!)
4. Let the soup to chill for 10-15 minutes in refigerator.
5. Add a dash of olive oil before serving.
