Vegetable Khichdi, Chaas (Buttermilk), Beetroot Salad


Vegetable Khichdi

Ingredients:

  • Green pepper
  • Carrots
  • Peas
  • Spinach
  • Cabbage
  • Cauliflower
  • Potatoes
  • Tomatoes
  • Green Moong Dal
  • Rice
  • Turmeric powder
  • Mustard seeds
  • Cumin seeds
  • Ginger
  • Garam Masala
  • Salt

In a pan, add some oil, mustard seeds, cumin seeds and ginger (You can add green chillies if you like it spicy). Then add all the vegetables and cook for sometime till they are half cooked. Then add the rice and the Dal, add water. Then add the spices such as turmeric powder, garam masala and salt.
Cover it with a lid till its cooked. Keep stirring in between.

Chaas (Buttermilk)

  • Yogurt
  • Coriander leaves
  • Cumin seeds
  • Ginger


Blend the yogurt, ginger, coriander and cumin seeds together with a little water. Then take a strainer and strain the yogurt mixture. Add chilled water to it. Water should be double the amount of the yogurt and serve chiiled.

Beetroot Salad

  • Beetroot
  • Cumin seeds
  • Coriander powder
  • Turmeric
  • Salt
  • Sugar

First grate the beetroot. In a pan, add some oil, cumin seeds and the grated beetroot. Add turmeric powder, salt, sugar, coriander powder and cook it for some time.
