St-Patrick Green Salad, Fettucini Sauce Alfredo, Broccoli Soup, Irish Soda Bread

ST-PATRICK GREEN SALAD

Ingredients: Servings: 8

  • 1 salad
  • 2 avocados
  • 2 green pepper
  • 1 pack mint
  • 1 green melon
  • chives
  • 1/4 cup white raisins
  • 1/4 cup olive oil
  • 2 limes
  • salt and black pepper to taste

Preparation: 15 mn

1. Cut the vegetables, squeeze the lime, mix the lime juice, olive oil, few mint leaves and chives, salt and pepper with a hand mixer until smooth.

2. Poor the mixture over the vegetable, garnish with the raisins and serve.

FETTUCICNI SAUCE ALFREDO

Ingredients: Servings: 4

  • 1/2 cup butter
  • 1 (8 ounce) package cream cheese
  • 2 teaspoons garlic powder
  • 2 cups milk
  • 6 ounces grated Parmesan cheese
  • 1/8 teaspoon ground black pepper
  • 2 packs fettucini pasta
  • 1 pack parsley

Preparation: 30 mn Cooking Time: 30 mn

  1. Melt butter in a medium, non-stick saucepan over medium heat. Add cream cheese and garlic powder, stirring with wire whisk until smooth. Add milk, a little at a time, whisking to smooth out lumps. Stir in Parmesan and pepper. Remove from heat when sauce reaches desired consistency. Sauce will thicken rapidly, thin with milk if cooked too long. Meanwhile cook the pasta.Chop the parsley
  2. Toss with hot pasta and add the parsley to serve.
BROCCOLI SOUP

Ingredients: Servings: 8

  • 1 tablespoon olive oil
  • 1 leek, chopped
  • 1 cloves garlic, peeled and chopped
  • 2 (10 ounce) packages chopped frozen broccoli, thawed
  • 1 potato, peeled and chopped
  • 4 cups vegetable broth
  • 1/4 teaspoon ground nutmeg
  • salt and pepper to taste

Preparation: 30 mn Cooking Time: 30 mn

  1. Heat olive oil in a large saucepan, and saute leek and garlic until tender. Mix in broccoli, potato, and vegetable broth. Bring to a boil, reduce heat, and simmer 15 minutes, until vegetables are tender.
  2. With a hand mixer or in a blender, puree the mixture until smooth. Return to the saucepan, and reheat. Season with nutmeg, salt, and pepper.

Irish Soda Bread

Ingredients: Servings : 8

  • 1 cup milk
  • 2 tablespoons distilled white vinegar
  • 2 cups all-purpose flour
  • 1 tablespoon white sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Preparation: 15 mn Cooking Time: 45 mn

  1. Stir the milk and vinegar together, and allow to stand until curdled, about 10 minutes.
  2. Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet. In a bowl, mix together the flour, sugar, baking soda, and salt.
  3. Gradually stir the soured milk into the flour mixture until the dough just comes together, and turn the dough out onto a well-floured surface. Knead a few times, and shape into a round. Place the dough onto the prepared baking sheet. With a sharp knife, cut an X shape into the top of the dough to release steam and help the bread keep its round shape.
  4. Bake in the preheated oven until golden brown, about 45 minutes.
