Vegetable Soup

8 cups vegetable broth
2 zucchinis, diced
2 potatoes, diced
1 cup broccoli florets
1 leek stem cut julienne
3 Tbs. chopped parsley
2-3 Tbs. butter
Salt and black pepper to taste

1. Melt the butter in a saucepan and fry the vegetables until a little tender.
2. Heat the vegetable broth in a cooking pot and add the vegetables. Cook over medium heat until the vegetables are soft. Add the parsely on top.
3. Adjust the seasoning. You can serve with toasted bread. :)

Freekeh (green wheat)

3 cups Freekeh
6 cups vegetable broth
2 medium onions chopped small
7 Tbs. oil
3Tbs ghee, butter, or shortening
½ cup Almonds, peeled and chopped
½ cup Pine nuts
1Tbs. salt
1 tsp. pepper (optional)

1. Heat 2 T ghee and 3 T oil in a pot, then stir fry the onions until slightly browned.
2. Clean and wash the Freekeh add to the fried onions and stir together until all the Freekeh is well coated with the oils, and then add the boiled broth, season with salt and pepper and cover. Let it boil for 10 minutes then simmer for 1 hour, checking continuously to stir and add boiled water if necessary.
3. Heat the rest of the ghee and oil in a frying pan and fry the almonds and pine nuts. Remove and keep aside.
4. Transfer the Freekeh to a serving dish, and decorate with almonds and pine nuts.
5. Serve with yogurt and a green salad. Enjoy :)
