Vietnamese and Chinese Combo!

Vietnamese Spring Roll

Ingredients
10-15 Rice wrappers
2 Carrots
1 Cucumber
2 Peppers
Fresh basil
Fresh mint leaves
Cabbage leaves

Sauce 1:
¼ cup water
4 tbs soya sauce
2 tbs fresh lime juice
1 clove garlic, minced
2 tbs white sugar
½ teaspoon garlic chili sauce

Sauce 2:
3 tbs hoisin sauce
Finely chopped peanuts

Cooking
Boil water and boil rice vermicelli for 3 to 5 minutes, and drain. Set aside.
Fill a large bowl with warm water. Dip one wrapper into the hot water for a few seconds to soften.
Lay wrapper flat. Arrange a handful of vermicelli, basil, mint, and vegetables in the center of the rice wrapper.
Fold uncovered sides inward, then tightly roll the wrapper.
In a small bowl, mix the lime juice, garlic, sugar and chili sauce.
In another small bowl, mix the hoisin sauce and peanuts.
Serve rolled spring rolls with either of the two sauce mixtures.


Chinese Sticky Rice Flour Desert

Ingredients
1 cup glutinous rice flour (also known as sticky rice flour)
1/3 to 1/2 can coconut milk
About 1 cup brown sugar
1/2 tsp. oil
1 cup finely chopped peanuts

Optional: 1/2 cup dried shredded coconut

Cooking
Add coconut milk to rice flour to form a soft dough (like play dough).
Make little balls with the dough by rolling a little of the dough between the palms.
Indent a little ball and place about 1/2 tsp of brown sugar in the rice ball. Fold the sides to close the ball and reshape between the palms. Repeat for the rest of the little rice balls.
Add the balls in boiling water. They will sink to the bottom at first, then gradually rise to the surface after about 2 minutes. Let them cook for another 2 minutes (about 4-6 minutes in total).
Remove and roll the sticky balls in the peanuts or coconut to coat.
Serve warm or at room temperature. Eat within 24 hours (otherwise they will begin to harden).

Modification 1: Instead of coconut milk and brown sugar in the middle of the balls, you can also use sweetened condensed milk.

Modification 2: You can also use sweet red bean paste instead of brown sugar in the middle of the balls.
