Greek Salad

Greek salad, or horiatiki salata, is a rough country salad of juicy tomatoes, crisp cucumber, sliced red onion, green pepper, crumbly feta cheese and plump kalamata olives. Greek salad can be served as a side dish or as a light meal with some crusty bread.

Ingredients
3 tablespoons extra virgin olive oil
1½ tablespoons lemon juice
½ teaspoon dried oregano
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper, and extra for garnish
3 tomatoes—cut into wedges
1-2 shallots—sliced into rings
½ cucumber—sliced into thick half-moons
4 oz (120g) feta cheese—cut into small cubes
16 kalamata olives

Preparation
Place the salad ingredients in a large bowl.

Cooking
Place the olive oil, lemon juice, salt, pepper and oregano in a small jar with a screw-top lid and shake to combine.
Pour the dressing over the salad and toss gently to combine just before serving. GARNISH the Greek salad with a little freshly ground black pepper.


Currant and Almond Rice

Ingredients
2 cups uncooked jasmine or basmati rice
2 tablespoons butter
1/4 teaspoon salt
1/4 cup chopped toasted almonds
1/4 cup dried currants

PreparationWash rice well.

Cooking
Prepare rice by adding 4 cups water to 2 cups rice and bring to a boil, adding butter and salt and almonds.
Turn off heat, add currants and cover for another 5min.


Toasted Pita bread with Spices

Cooking Time: 5 minutes

Ingredients
1 large pita bread
1 tablespoon of extra virgin olive oil
1 teaspoon garden herbs (thyme, mint, basil, oregano)
½ teaspoon salt

PreparationCut large pita bread into 8 strips.

Cooking
Garnish with extra virgin olive oil and sprinkle garden herbs (basil, Thyme, Mint, Oregano).
Sprinkle a little salt.
Toast in oven on 350F until slightly brown.
Remove and let cool for a few minutes.


Healthy Oven Roasted Vegetables

Preparation Time: 10 minutes
Cooking Time: 15 minutes

Ingredients
5 zucchinis, peeled and cut into thin flat strips
3 bell peppers, cut into thin strips
1 broccoli
1/3 cup olive oil
1 teaspoon coriander
1 teaspoon cumin
1 teaspoon oregano
½ teaspoon salt & fresh ground pepper

Preparation
Preheat oven to 350ºF.
Cut bell peppers and zucchini into thin strips.

Cooking
Place vegetables in a large roasting pan. Add olive oil. Season with salt, pepper, cumin, coriander and oregano. Toss well.
Bake 30 minutes. Uncover and bake, stirring occasionally, for another 30 to 40 minutes or until vegetables are tender, golden brown and still slightly crispy.


Rose Jam Lassi

Ingredients
2 tablespoons rose jam (or Gulkhand)
2 cups full fat yogurt (3.8%)
2 cups water

Preparation
None.

Cooking
Mix all ingredients and enjoy!
