Moroccan Couscous (2011-05-21 Nadia)

Cooking Time: 20 minutes



Ø 4 tbsp olive oil

Ø 2 cup vegetable broth

Ø 1 onion, chopped

Ø 4 carrots, sliced thin

Ø 1 green, red or yellow peppers, sliced thin

Ø 2 zucchini, sliced thin

Ø 2 potatoes, cubed

Ø 1 can chickpeas

Ø 1 can green peas

Ø 1 tbsp tomato paste

Ø 1 can diced tomatos

Ø 1/2 tsp cinnamon

Ø 1/2 tsp turmeric

Ø Pinch cumin, cinnamon, cardamom, cayenne, cloves, and ginger.


Ø 3 cups medium couscous

Ø 2 Tbs butter, cubed

Ø 1 tsp salt

Ø Saffron threads soaked in 5 Tbs water

Ø 2 ½ cups hot water

Ø ½ cup raisins

Ø 3 Tbs vegetable oil

Ø ½ cup almonds

Cooking Instructions


· Put the couscous in a bowl; add the salt and water and mix to make sure that the couscous will absorb the water. Leave to stand for 10 minutes.


· Sautee onion, carrots, potato, zucchini, green beans, chick peas and bell peppers in olive oil for 8 to 10 minutes. Reduce heat to medium and add diced tomatoes and vegetable broth.

· Allow to simmer, then add spices, tomato paste.

· Rub the couscous with the oil and saffron threads to break up any lumps left. Transfer to an ovenproof dish, top with the cubes of butter and cover with aluminum foil.

· Heat for around 10 minutes in the oven.

· Transfer the couscous to a serving platter and spoon in a pile. Sprinkle with almonds and raisins.

Asian Salad (2011-05-21 Nadia)

Quantity: 6

Preparation Time: 10 minutes

Cooking Time: 5 minutes


Ø 3 Carrots

Ø 1 whole red cabbage

Ø 1 whole green cabbage

Ø ½ cup soy sauce

Ø 2 cups brown sugar

Ø ½ cup olive oil

Ø 1 cup vinegar

Ø Noodles

Ø Sesame seeds

Cooking Instructions


· Shred the carrots and cabbage and place in a bowl.


· In a sauce pan, mix together the soy sauce, brown sugar, olive oil and vinegar and boil for 2-3 minutes.

· Roast the noodles until crispy.

· Mix the sauce with the vegetables and then sprinkle with the noodles and sesame seeds.

Sesame Treats (2011-05-21 Nadia)

Quantity: 6

Preparation Time: 10 minutes

Cooking Time: 5 minutes


Ø 2 cups sesame

Ø 1 cup almonds

Ø 1 cup pistachios

Ø ½ cup powdered sugar

Ø ½ cup honey

Ø 1 Tbs lemon juice

Cooking Instructions


· Measure the ingredients J


· In a sauce pan, heat together the sugar, honey and lemon juice until it thickens. Then stir in the sesame seeds, almonds and pistachios.

· Spread the mixture onto a baking sheet and allow it to cool, then cut into squares.
