Stuffed Brioche (2011-05-07 Pamela)

Ingredients
Brioche Dough:
Ø 250g flour
Ø 50g butter
Ø 5 g (+) yeast
Ø 150 ml warm milk (60 % warm)
Ø Pinch of salt and sugar
Ø Garnish: White Sesame seeds
Ø Glazing: Milk
Filling:
Ø 2 carrots
Ø 5-10 mushrooms
Ø 2 Bok Choy
Ø 1/2 cup frozen peas
Ø 100g Tofu
Ø 1-2 Peppers (Poivrons)
Ø 1 bunch spring onions
Ø 2T cornflour
Ø Hoisin sauce
Ø Oil for stir-frying
Ø 1 small piece ginger
Alternative filling:
Ø Spinach
Ø Feta cheese
Ø Pine nuts
Ø Cherry tomatoes
Ø Onions
Sweet filling:
Ø Dark chocolate chips
Ø Hazelnuts
Cooking Instructions
Preparation
· Preheat oven 410 F.
· Grease baking tray.
· Cut all vegetables.
Cooking
· Prepare filling: Heat oil, add ginger.
· Cook for a few minutes, then add the vegetables, starting with those that take longer to cook. Stir-fry until tender.
· On the side, add cornflour to a little cold water and hoisin sauce. Mix well.
· Add sauce to vegetables and cook until sauce thickens.
· Prepare brioche dough: Mix all the dough ingredients together to get a soft dough. Knead well.
· Make little round balls. Place on baking tray.
· Put filling on round balls and cover with plaited dough.
· Garnish with sesame seeds. Note that any shape (ring, etc...) can be made.
· Leave to rise: 30 min
· Brush with milk (Glazing) and bake for 20 min (410 F for 10 min, then 390 F for another 10 min).
· Serve hot with salad.
