Ingredients

Dough:

Ø Atta Flour

Ø Water (About 60% of flour)

Ø Ajwan

Ø Salt

Potato Filling:

Ø Potatoes

Ø Salt

Ø Dried Herbs

Ø Oil

Ø Whole Coriander

Ø Whole Cumin

Ø Fresh coriander or mint

Ø Ginger

Ø Turmeric

Ø Optional: Masala or ground spices (cumin, coriander)

Cauliflower Filling:

Ø Cauliflower

Ø Asofetida

Ø Salt

Ø Cumin, Coriander

Paneer Filling:

Ø Paneer

Ø Salt

Ø Shahi Paneer Masala

Cooking Instructions

Preparation

· Cut all vegetables, peel and grate ginger.

· Cook potato filling.

Cooking

· Mix all dough ingredients to get a soft but not sticky dough. Leave dough to rest.

· Make a small round with the dough and put the filling. Roll and cook on both sides for a few minutes.

· Serve hot.

Ø Tomatoes

Ø Salt

Ø Chili

Ø Optional: Onion and garlic

Ø Blend

Raita:

Ø Cucumber

Ø Dill

Ø Yogurt

Ø Salt

Ø Olive Oil

Ø Mustard paste

Cooking Instructions

Preparation

· Wash and chop coriander, tomatoes.

· Peel and grate cucumber.

Cooking

· Mix all ingredients for each accompaniment.
