Spinach Lasagna (2011-03-26 Pamela)

Ingredients
Pasta Dough:
Ø Flour
Ø Water
Ø Salt
Ø Olive Oil
Ø 1 bunch Spinach
Ø 1 Broccoli
Ø 4-5 zucchinis
Ø Pasta (Tomato) Sauce
Ø Thyme
Ø Feta cheese
Ø Ricotta cheese
Ø Mozzarella cheese
Ø Salt to taste
Ø Oil for stir-frying
Cooking Instructions
Preparation
· Preheat oven 3750F.
· Grease baking tray.
· Cut vegetables. Dice feta cheese.
· Make fresh pasta: Make a dough by mixing and kneading flour, water, salt and a little olive oil. Rest for at least one hour (in a plastic bag – which will keep the moisture of the dough).
Cooking
· Stir-fry vegetables and add to pasta sauce. Add ricotta cheese and feta cheese.
· Bring a large pot of water to boil. Add pasta and cook for 4-6 minutes. Drain.
· Layer pasta and pasta sauce mixture in baking tray, ending with pasta sauce.
· Bake for about 30 minutes.
· Spread mozzarella cheese as topping and bake for another 10 minutes.
Tapioca Pearls Dessert (2011-03-26 Pamela)
Quantity: 4-6
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Ingredients
Ø ½ cup small pearl tapioca
Ø 3 ½ cup liquid (Coconut milk + regular whole milk)
Ø ½ cup sugar
Ø ½ tsp vanilla
Cooking Instructions
Preparation and Cooking
· Mix all and simmer until tapioca pearls are transparent and mixture is thick.
· Serve warm or cold.
