Brown Lentil and Swiss Chard Soup

Quantity: 4-7
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Ingredients

Ø 2 cups of Brown Lentils
Ø 1 bouquet of Swiss Chards
Ø 1 bouquet of Fresh Coriander (Cilantro)
Ø 1 Garlic clove
Ø Water
Ø 3 Tsp of olive oil
Ø Salt
Ø 1 lemon
Cooking Instructions
Preparation
· Wash then chop Swiss chards with leaves (half a centimetre wide)
· Wash the brown lentils
· Chop corriander finely
· Crush garlic into paste
· Squeeze lemon
Cooking
· Place the lentils, olive oils and salt in a pot and fill with water
· Bring to boil then simmer
· When the lentils are half cooked add Swiss chards and keep cooking
· Add water when needed to keep soup consistency
· 5 minutes before the soup is ready, add garlic and coriander
· Add salt to taste
· Serve with lemon juice (optional)


Lebanese Okra (2011-03-05 Ralph)

Quantity: 4-7
Preparation Time: 30 minutes
Cooking Time: 45 minutes
Ingredients

Ø 500 g of Okra
Ø 250g of ripe tomatoes
Ø 1 bouquet of fresh coriander (cilantro)
Ø 1 garlic clove
Ø 2 Tsp olive oil
Ø Tomato paste
Ø 1onion
Ø 1 lemon
Ø Salt
Ø White Basmati rice
Cooking Instructions
Preparation
· Wash then cut off the stems of the each Okra in a circular motion
· Cut tomatoes into small cubes
· Crush garlic into paste
· Squeeze lemon
· Chop coriander finely
Cooking
· Grease tray and bake Okra in oven until crispy (350 deg C)
· In a pot sauté onions and garlic with olive oil on low heat.
· Add tomato cubes and cook until tomatoes become tender
· Add Okra, salt, coriander then tomato paste with water and lemon juice to cover the pot
· Simmer and cook on low heat until water evaporates
· Serve hot or cold with lemon juice and white basmati rice

Pureed Potatoes (2011-03-05 Ralph)

Quantity: 4-7
Preparation Time: 10 minutes
Cooking Time: 0 minutes
Ingredients
Ø 4 medium red or white potatoes
Ø 3 Tsp olive oil
Ø Salt to taste
Ø Ground black pepper
Ø Jamaican pepper
Ø 1 bouquet of green onions
Ø Whole wheat pita bred
Cooking Instructions
Preparation
· Finely chop the green onions
Cooking
· Boil potatoes until tender
· Peel potatoes and puree
· Mix puree potatoes with olive oil, salt and spices
· Serve with finely chopped green onions and pita bread
