02-19-2011 Mango Rice with our lovely chef Sudha

Mango Rice, South Indian 

Quantity:                   4-7

Preparation Time:           5 minutes

Cooking Time:               20 minutes



Ingredients

-  Cooked Basmati or Sona Masoori - 2 cups uncooked

-  1 ½ cups Raw grated mango

-  1 cup Shredded coconut

-  1 T Mustard seeds

-  1 tsp Turmeric

-  a pinch or ½ tsp Hing

-  2 springs Curry leaves

-  2 Green chilli

-  ½ small cup Cashew nuts

-  1 tsp Urud dhall

-  1 tsp Cumin seeds

-  Salt- As required

-  1 small cup Cilantro

-  1 ½ T Ghee or Butter



Cooking Instructions



Preparation

·         Cook rice (1:2 ration rice and water)

·         Once done (grains separate, not mushy) spread on a tray or plate and let it cool down a bit.

·         Grind mango, coconut, mustard seeds and green chillies.



Cooking

·         Heat ghee or butter in a pan. Fry urud dhall, a little bit mustard seeds, cumin seeds, hing and turmeric. Add in cashews, curry leaves until it turns aromatic.

·         Add the paste and cook for 5-10 mins. Turn off the heat.

·         Mix the paste to the cooked rice and blend well. Make sure not to break the grains when cooking.

·         Garnish with chopped cilantro and ENJOY!



PS: Tastes great with yoghurt. If you prefer hot you can add red chillies.




Cauliflower Potato Mix 

Quantity:                   4-7

Preparation Time:           5 minutes

Cooking Time:               20-30 minutes



Ingredients

-  1 Cauliflower

-  5 medium Potatoes

-  2 medium Tomatoes

-  1 T Grated ginger

-  1 tsp Cumin seeds

-  1 tsp Mustard seeds

-  A pinch Hing- a pinch

-  1 tsp Turmeric

-  1 tsp Cumin powder

-  1 tsp Coriander powder

-  1 tsp Aamchur/Dried Mango Powder

-  2 Bay leaves

-  2 T Sunflower oil

-  1 spring Curry leaves

-  Salt as per taste

-  ½ cup Chopped Cilantro

·         Cut vegetables.



Cooking

·         Heat oil. Add mustard seeds, cumin seeds, hing, bay leaves, curry leaves, turmeric and blend well.

·         Add the ginger, tomatoes, and powdered spices. Let it cook.

·         Add chopped potatoes. Mix well. Let it cook for 5-10 mins. Then add cauliflower. Add 1 cup water.  Add Salt.

·         Mix well and bring it to simmer until the vegetables are cooked.

·         Garnish with chopped cilantro and ENJOY!




Vegetable Salad 

Quantity:                   4-7

Preparation Time:           10 minutes

Cooking Time:               0 minutes



Ingredients

-  1 Lettuce

-  1 Cucumber

-  1 Avocado  

-  2 Tomatoes

-  1 cup Raisins

-  ½ small cup Sunflower seeds



For dressing:

-  1 small cup Olive oil

-  2 T Maple syrup

-  Sumac or Lemon juice as per taste

-  Salt
