Mauritian Fried Noodles

Dried Noodles
Carrots
Peppers
Cabbage
Bok Choy
Mushrooms
Bean Sprouts
Tofu

Spring Onion
Ginger
Sesame Oil
Oil for Frying
Soy Sauce
Hoisin Sauce
Stir-Fry Sauce

Optional: Nira garlic chives

Boil noodles for 1 min (half-cooked).
Cut vegetables in long strips

Stir fry all vegetables and tofu. Remove from heat.
Then add a little oil in Wok and add grated ginger.  Stir.
Add noodles and soy sauce. Mix using forks. 
Then add all vegetables.  Mix. 
Season and add a little sesame oil at the end.

Accompaniment: Tomato Chutney

Tomatoes
Chilli
Coriander
Mint
Olive Oil

Sel (at the end)

Optional: Onion, Garlic

Blend all ingredient
Add salt just before serving (otherwise it will release water).

Optional: Crush onions/garlic and add.
