Swiss Circles Quantity: 15 servings Preparation Time: 20 minutes Cooking Time: 20 minutes Ingredients Sliced Bread (1 per Swiss Circle) Paneer Peppers (any color) Red chili powder Green chili Garam Masala Ketchup Salt Corn flour Cooking Instructions Preparation 1. Grate paneer. 2. Cut peppers in small squares. 3. Finely cut green chili. 4. Mix corn flour and water to make a thick paste. Cooking 5. Cut edges of bread slice and flatten with a rolling pin. 6. Mix paneer, ketchup, cut peppers, green chili, garam masala, salt and chili powder. 7. Fill the mixture into half of the flatten bread. 8. Roll and seal with the corn flour paste. 9. Fry OR cut the rolls into three parts, brush with butter and grill on a greased tray for 5-10 min until it becomes brown. --- Rasmallai Quantity: 20 servings Preparation Time: 90 minutes Cooking Time: 20 minutes Ingredients Milk (5l for paneer and an additional 5l for the thick milk) Plain white vinegar Sugar (3 cups for syrup + 1-2 cups for milk) Cardamom Saffron Pistachios Cooking Instructions Preparation 1. Make paneer by boiling the milk and then adding vinegar until the solid separates. 2. Wash it and drain it. Squeeze the paneer. 3. Make syrup: 1 cup of sugar for 3 cups of water for 15-20 pieces. Bring the solution to boil. 4. Boil milk with saffron, cardamom and pistachios until it is reduced to half its volume. Add sugar. Cooking 5. Mash the paneer until it becomes a smooth dough. Make small balls and slightly flatten them. 6. Put paneer balls into boiling syrup. Reduce heat and cover for 5-7 minutes. 7. Reduce to low heat for 10 minutes. Leave to cool. 8. Add balls in milk and serve cold.
