Tinga

Quantity:          3-4 servings
Preparation Time:  25 minutes
Cooking Time:      20 minutes

Ingredients

6 Carrot
4 Chipotle
1 Garlic
1 tsp Salt
1 Onion
6-8 Tomato
Few Laurel leaves
Vinegar
Olive oil
8-10 Tostadas (baked tortilla, corn)
Sour cream
Cheese (fresh not for melting)


Cooking Instructions

Preparation
1. Grate carrots.
2. Slice onion.

3. Place sliced onion in a pan and fry until they are yellowish and crispy then add half spoon of vinegar.
4. In blender, place the garlic, chipotle (to taste), garlic salt and tomato blend perfectly.
5. Pour the carrot into the pan with the onion, stir for like about five minutes, place the mix, add laurel leaves and heat for half an hour.
6. Presentation: Place the tostada, add the tinga with the lettuce, sour cream and on top the cheese.
